I sapori di Puglia

Ci sono luoghi che si ricordano per i paesaggi e altri che rimangono impressi nella memoria per i sapori. La Puglia appartiene senza dubbio a entrambe le categorie. E sicuramente è anche un po’ per questo che ce ne siamo innamorati. Siamo un po’ esteti e con papille particolarmente curiose ed esigenti.

In Puglia il cibo non è soltanto nutrimento. È un gesto d’amore, un rituale quotidiano, una storia tramandata di generazione in generazione. Il pacco da giù, d’altronde, ha un suo perché, è l’amore trasformato in prelibatezze, che ti raggiunge ovunque tu sia e ti riporta a casa anche a distanza.

La cucina pugliese è fatta di cose semplici, genuine, diciamo un confort food che avvolge e incanta: il profumo del sugo che sobbolle lentamente sul fuoco, il pane ancora caldo portato in tavola, l’olio nuovo assaggiato su una fetta di pane abbrustolito.

È una cucina fatta di pochi ingredienti, ma straordinariamente generosa.

I taralli, per esempio, sono molto più di un semplice spuntino. Si preparano con ingredienti semplicissimi, farina, vino, olio extravergine di oliva, semi di finocchio, o tant’altro, e racchiudono tutta l’essenza della cucina pugliese. Uno tira l’altro e, immancabilmente, finiscono al centro dei nostri eterni apertivi estivi.

Poi ci sono i pomodori secchi, che conservano il sole dell’estate e sembrano raccontare una storia antica. Vengono essiccati lentamente. E li acquisto a chili al mercato. In frigo si conservano all’infinito. Pian piano poi li trasformo immergendoli nell’olio, e mescolandoli con l’aglio, l’origano e i capperi. Basta assaggiarne uno per ritrovare l’estate tutto l’anno.

Tra i piatti che contraddistinguono questa regione le regine indiscusse sono le orecchiette con le cime di rapa. Una ricetta tanto semplice quanto perfetta, nella quale l’amaro delle verdure incontra la dolcezza della pasta fresca e il carattere deciso dell’aglio, delle acciughe e del peperoncino. Praticamente la Puglia in un boccone.

Sul lato dolce c’è il l pasticciotto, il re indiscusso delle colazioni salentine. Cerco sempre di averne un vassoio pronto per la prima colazione dei nostri molteplici ospiti. Un guscio fragrante di pasta frolla che custodisce un cuore morbido di crema pasticcera. Ideale gustarlo accompagnato da un caffè.

Anzi, da un caffè leccese.

Un’ insolita combinazione di caffè, ghiaccio e latte di mandorla. Dopo il primo sorso, tutto acquista un senso. È una bevanda che racchiude l’estate salentina in un bicchiere.
Per me non c’è inizio di vacanza senza il mio primo caffè leccese, che devo dire mio genero e il mio futuro genero, americano uno e tedesco l’altro, hanno imparato a preparare perfettamente per la suocera gourmet che sono!

Naturalmente l’elenco potrebbe continuare ancora a lungo.

Ci sono le pucce, gonfie e dorate, farcite nei modi più diversi. Ci sono le friselle, che attendono pazientemente di essere bagnate con l’acqua (alla quale io aggiungo un filo d’aceto) e condite con pomodori, origano, olio extravergine di oliva, e le mozzarelle straordinarie (io le compro al Caseificio Negro a Bortrugno). E ancora ci sono le fave con la cicoria, i lampascioni, le pittule che rendono dipendenti, la stracciatella, la focaccia barese.

E per condire il tutto l’olio extravergine di oliva, il vero sovrano di questa terra. Del resto, in una regione abitata da milioni di ulivi, non potrebbe essere altrimenti. Anche se negli ultimi anni, il paesaggio pugliese è cambiato profondamente. La Xylella, un batterio arrivato nel Salento più di dieci anni fa, ha colpito milioni di ulivi, trasformando distese rigogliose in silenziosi boschi di tronchi contorti e rami secchi.

È difficile spiegare a chi non ha mai visto questi luoghi quanto sia doloroso assistere alla scomparsa di alberi che esistevano da secoli e che, in molti casi, avevano attraversato intere generazioni della stessa famiglia. Anche in Masseria non siamo stati esenti da perdite, ma pian piano con pazienza vediamo la fine del tunnel….

Ritornando alla cucina pugliese, sicuramente il suo segreto è la capacità di trasformare ingredienti semplici in qualcosa di indimenticabile, saporito, una sorta di grande coccola.

Ma in fondo, non è forse proprio questo che il cibo deve trasmetterci?

The Flavours of Puglia

Some places are remembered for their landscapes, while others remain etched in our memories because of their flavours. Puglia undoubtedly belongs to both categories. And that is certainly one of the reasons why we fell in love with it. We are, after all, a little bit aesthetes, with particularly curious and demanding taste buds.

In Puglia, food is not merely nourishment. It is an act of love, a daily ritual, a story handed down from one generation to the next. The famous pacco da giù, the parcel of food lovingly sent from the South, exists for a reason. It is affection transformed into delicacies that reach you wherever you are and bring you home, even from afar.

Puglian cuisine is made up of simple, wholesome things. It is a kind of comfort food that embraces and enchants: the scent of tomato sauce gently simmering on the stove, warm bread placed on the table, freshly pressed olive oil drizzled over a slice of toasted bread.

It is a cuisine built on just a few ingredients, yet one that is extraordinarily generous.

Take taralli, for example. They are much more than a simple snack. Made with only a handful of ingredients – flour, wine, extra virgin olive oil, fennel seeds and countless variations, they capture the very essence of Puglian cooking. One leads to another and, inevitably, they always end up at the centre of our endless summer aperitifs.

Then there are the sun-dried tomatoes, which preserve all the warmth of summer and seem to tell an ancient story. I buy them by the kilo at the market, where they can be found in abundance. They keep forever in the refrigerator. Little by little, I transform them by immersing them in olive oil together with garlic, oregano and capers. One bite is enough to bring summer back at any time of the year.

Among the dishes that best represent this region, the undisputed queens are orecchiette with turnip tops. A recipe that is both simple and perfect, where the slight bitterness of the greens meets the sweetness of fresh pasta and the bold flavours of garlic, anchovies and chilli peppers. Puglia in a single bite.

On the sweeter side, there is the pasticciotto, the undisputed king of Salento breakfasts. I always try to have a tray of them ready for our many guests. A crisp shell of shortcrust pastry holds a soft heart of custard cream. Ideally, it should be enjoyed with a coffee.

Or rather, with a caffè leccese.

This unusual combination of coffee, ice and almond milk suddenly makes perfect sense after the very first sip. It is a drink that captures the essence of a Salento summer in a single glass.

For me, no holiday truly begins without my first caffè leccese. And I must admit that my son-in-law and my future son-in-law , one American, the other German, have both learned to prepare it perfectly for the gourmet mother-in-law that I am.

Of course, the list could go on and on.

There are pucce, golden and puffed up, filled in countless different ways. There are friselle, patiently waiting to be dipped in water – to which I always add a splash of vinegar, before being topped with tomatoes, oregano, extra virgin olive oil and extraordinary mozzarella. I buy mine from the Negro dairy in Botrugno.

Then there are fava beans with chicory, lampascionipittule, which are wonderfully addictive, creamy stracciatella and the ever-present focaccia from Bari.

And, tying everything together, there is extra virgin olive oil, the true king of this land. In a region home to millions of olive trees, how could it be otherwise?

Although, over the past few years, the Puglian landscape has changed profoundly. Xylella, a bacterium that first appeared in Salento more than a decade ago, has affected millions of olive trees, transforming thriving groves into silent forests of twisted trunks and withered branches.

It is difficult to explain to anyone who has never seen these places just how painful it is to witness the disappearance of trees that had stood for centuries and had accompanied generations of the same family.

Even at our masseria, we have not been spared. We, too, have suffered losses, but little by little, and with great patience, we are beginning to see the light at the end of the tunnel.

Returning to Puglian cuisine, I believe that its secret lies precisely in its ability to transform simple ingredients into something unforgettable, full of flavour and deeply comforting.

And, after all, isn’t that exactly what food should do?
